Ingredients
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 lb (450g) dried green split peas, rinsed
- 8 cups (2 liters) chicken or vegetable broth
- 1 ham hock or 2 cups diced cooked ham
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in split peas, broth, ham hock (or diced ham), bay leaves, and thyme. Bring to a boil.
- Reduce heat to low, cover, and simmer for 45-60 minutes, until peas are tender and falling apart.
- Remove ham hock if used; shred meat and discard bone. Return meat to soup.
- Discard bay leaves. Season with salt and pepper to taste.
- For a smoother soup, use an immersion blender to partially blend, leaving some texture.
