Ingredients
4 medium potatoes (about 800g), peeled and cut into 1-inch cubes
1 large onion, thinly sliced
2 green bell peppers, seeded and cut into strips
2 cloves garlic, minced
200g Spanish chorizo, sliced into rounds
100 ml extra virgin olive oil
Salt to taste
1 teaspoon smoked paprika (optional)
Instructions
1. In a large frying pan, heat the olive oil over medium heat. Add the potatoes and fry for about 10 minutes, stirring occasionally, until they start to soften.
2. Add the sliced onion and green pepper strips to the pan. Cook for another 10 minutes, stirring occasionally, until the vegetables are tender and lightly browned.
3. Add the minced garlic and chorizo slices. Cook for 5-7 minutes, until the chorizo is heated through and releases its oils.
4. Season with salt and smoked paprika if using. Stir well and cook for 2 more minutes.
5. Remove from heat and serve hot, directly from the pan.
Tips
Use waxy potatoes for best texture as they hold their shape.
For extra richness, add a splash of sherry vinegar at the end.
Leftovers can be reheated in a pan; add a little water to prevent sticking.
