A hearty and flavorful Italian ragù made with Italian sausage, simmered with tomatoes and herbs, then tossed with your favorite pasta.

Ingredients
1 tablespoon olive oil
1 pound sweet or spicy Italian sausage, casings removed
1 medium onion, finely chopped
3 cloves garlic, minced
1/2 cup dry red wine (optional)
1 can (28 ounces) crushed tomatoes
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces pasta (such as rigatoni or penne)
1/4 cup grated Parmesan cheese, plus more for serving
2 tablespoons chopped fresh basil or parsley
Instructions
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned, about 5 minutes. Transfer to a plate.
Reduce heat to medium. Add onion and cook until softened, about 4 minutes. Add garlic and cook 1 minute more.
If using wine, pour it in and scrape up any browned bits. Simmer until mostly evaporated, about 2 minutes.
Stir in crushed tomatoes, oregano, salt, and pepper. Return sausage to the pan. Bring to a simmer, then reduce heat to low and cook, uncovered, for 20 minutes, stirring occasionally.
Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
Add drained pasta to the sauce and toss to coat, adding a splash of pasta water if needed to loosen. Stir in Parmesan and basil. Serve with extra Parmesan.
Tips
For a spicier ragù, use hot Italian sausage.
This sauce can be made ahead and refrigerated for up to 3 days or frozen for 3 months.
