1 tablespoon olive oil
1 pound sweet or hot Italian sausage, casings removed
1 medium onion, sliced
2 bell peppers (any color), sliced
3 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional)
1 (14.5-ounce) can diced tomatoes
1/2 cup chicken broth
8 ounces short pasta (e.g., penne, rigatoni)
Salt and black pepper to taste
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Instructions
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned, about 5 minutes. Transfer to a plate.
In the same pot, add onion and bell peppers; cook until softened, about 5 minutes. Add garlic and red pepper flakes; cook 1 minute.
Stir in diced tomatoes and chicken broth, scraping up any browned bits. Bring to a simmer.
Add pasta and cooked sausage back to the pot. Stir to combine, cover, and reduce heat to medium-low. Cook until pasta is tender, about 12-15 minutes, stirring occasionally.
Season with salt and pepper. Serve topped with Parmesan and parsley.
