Ingredients
8 oz (225g) salmon fillet, skin removed
12 oz (340g) pasta (fettuccine or penne)
2 tbsp olive oil
3 cloves garlic, minced
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Salt and black pepper to taste
1 tbsp lemon juice (optional)
Instructions
Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
While pasta cooks, season salmon with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook salmon for 4 minutes per side, until cooked through. Remove from skillet and flake into pieces.
In the same skillet, reduce heat to medium. Add garlic and sauté for 30 seconds until fragrant.
Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted. If sauce is too thick, add reserved pasta water a tablespoon at a time.
Add cooked pasta and flaked salmon to the skillet. Toss to coat. Season with salt and pepper. Stir in parsley and lemon juice if using. Serve immediately.
Tips
For extra flavor, add a pinch of red pepper flakes with the garlic.
Substitute salmon with trout or canned salmon (drained) if desired.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
