Instructions

  1. Heat olive oil in a large heavy pot or Dutch oven over medium heat. Add pancetta and cook until fat renders, about 3 minutes.
  2. Add onion, carrot, and celery; cook, stirring occasionally, until vegetables are soft, about 8 minutes.
  3. Add ground beef and cook, breaking up with a spoon, until no longer pink, about 5 minutes.
  4. Pour in wine and cook until evaporated, about 2 minutes.
  5. Stir in milk and cook until mostly evaporated, about 3 minutes.
  6. Add crushed tomatoes, salt, pepper, and nutmeg. Bring to a simmer, then reduce heat to low. Cook, uncovered, stirring occasionally, for 45-60 minutes until sauce thickens.
  7. Meanwhile, bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain, reserving 1/2 cup pasta water.
  8. Toss pasta with sauce, adding pasta water if needed for consistency. Serve with Parmesan cheese.
