Ingredients
- 12 oz (340 g) dried pasta, such as penne or fusilli
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated fontina cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Drain and set aside.
- In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in milk and cream. Continue cooking, whisking frequently, until the sauce thickens, about 5 minutes.
- Reduce heat to low. Add Parmesan, mozzarella, and fontina cheeses, stirring until melted and smooth. Season with salt, pepper, and nutmeg if using.
- Add the cooked pasta to the sauce and toss to coat evenly. Serve immediately.
Tips
- For extra flavor, add a pinch of red pepper flakes or a clove of minced garlic when melting the butter.
- Use freshly grated cheeses for the best melting and flavor.
- Leftovers can be stored in the refrigerator for up to 2 days; reheat gently with a splash of milk.
