Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini
3 tablespoons lemon juice
2 cloves garlic, minced
1/2 teaspoon salt
1/4 cup olive oil, plus more for drizzling
1 large eggplant
1/4 cup plain Greek yogurt
1/2 teaspoon smoked paprika
1 cup mixed olives (Kalamata, green)
1 tablespoon capers
1/2 teaspoon dried oregano
Pita bread or crackers for serving
Instructions
Preheat oven to 400°F (200°C). Prick eggplant with a fork, place on baking sheet, and roast for 30 minutes until soft. Let cool, then peel and chop flesh.
In a food processor, combine chickpeas, tahini, lemon juice, garlic, and salt. Process until smooth. With motor running, add 1/4 cup olive oil until creamy. Transfer hummus to a bowl.
In the same processor (no need to wash), combine roasted eggplant, yogurt, smoked paprika, and a pinch of salt. Blend until smooth. Transfer baba ganoush to a bowl.
In a small bowl, toss olives with capers and oregano.
Arrange hummus, baba ganoush, and marinated olives on a large platter. Drizzle hummus with olive oil and sprinkle paprika. Serve with pita or crackers.
Tips
Hummus and baba ganoush can be made a day ahead; refrigerate and bring to room temperature before serving.
Garnish with fresh parsley or pine nuts for extra flair.
