Ingredients
1 cup all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
8 breakfast sausage links
butter or oil for cooking
Instructions
Cook sausage links in a large skillet over medium heat, turning occasionally, until browned and cooked through, about 10 minutes. Remove from skillet and keep warm.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together buttermilk, egg, and melted butter. Pour into dry ingredients and stir just until combined (batter may be lumpy).
Heat a griddle or nonstick skillet over medium heat and lightly grease with butter or oil.
Pour 1/4 cup batter per pancake onto the griddle. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook until golden brown, about 1-2 minutes more.
Repeat with remaining batter. Serve pancakes immediately with sausage links.
Tips
Keep pancakes warm in a 200°F oven while cooking remaining batches.
Substitute buttermilk with 1 cup milk mixed with 1 tablespoon lemon juice or vinegar, let sit 5 minutes.
Store leftover pancakes and sausage separately in the refrigerator for up to 3 days; reheat in a toaster or skillet.
