  3. Pour wet ingredients into dry and stir until just combined (lumps are okay).
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
  5. Pour about 1/4 cup batter per pancake onto the skillet. Cook until bubbles form on surface and edges look set, about 2 minutes. Flip and cook 1-2 minutes more.
  6. Transfer pancakes to a plate and keep warm. Repeat with remaining batter. You should have 8 pancakes.
  7. In a small bowl, mix Greek yogurt with honey.
  8. To assemble, spread a spoonful of yogurt mixture down the center of each pancake. Top with sliced fruit.
