Ingredients
1 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg
3/4 cup milk
1 tablespoon unsalted butter, melted
1/2 cup strawberry jam or Nutella
Powdered sugar for dusting (optional)
Instructions
In a medium bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, beat the egg, then whisk in milk and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined (lumps are okay).
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges look set, about 2 minutes. Flip and cook until golden, about 1 minute more. Repeat with remaining batter to make 4 pancakes. Let cool slightly.
Spread a thin, even layer of jam or Nutella over one side of each pancake.
Roll up each pancake tightly like a jelly roll. Let cool completely to set.
Using a sharp knife, slice each roll into 1-inch pieces. Arrange on a plate and dust with powdered sugar if desired.
Tips
Make sure pancakes are completely cool before slicing to prevent the filling from oozing out.
For a neater cut, use a serrated knife and wipe it clean between slices.
These rolls are best served the same day but can be stored in an airtight container in the refrigerator for up to 2 days.
