1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 large egg
2 tablespoons melted butter
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/4 cup sliced pepperoni
1/4 cup sliced black olives
1/4 cup sliced mushrooms
1/4 cup chopped bell peppers
1 teaspoon dried oregano
Instructions
In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, whisk milk, egg, and melted butter. Pour wet ingredients into dry and stir until just combined (batter may be lumpy).
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour 1/4 cup batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2 minutes. Flip and cook for 1 more minute. Repeat with remaining batter to make 4 pancakes.
Preheat oven to 400°F (200°C). Place pancakes on a baking sheet lined with parchment paper.
Spread 2 tablespoons pizza sauce over each pancake, leaving a small border. Sprinkle with mozzarella cheese, then add pepperoni, olives, mushrooms, and bell peppers. Sprinkle oregano on top.
Bake for 8-10 minutes until cheese is melted and bubbly. Serve hot.
