Ingredients
1 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
2 large eggs
1/2 cup milk
1/2 teaspoon ground cinnamon
1 tablespoon unsalted butter, for cooking

Instructions
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk together buttermilk, 1 egg, melted butter, and vanilla. Pour into dry ingredients and stir until just combined (batter may be lumpy).
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter. Pour 1/4 cup batter per pancake onto skillet. Cook until bubbles form on surface and edges look set, about 2 minutes. Flip and cook until golden, about 1 minute more. Transfer to a plate. Repeat with remaining batter to make 8 pancakes.
In a shallow dish, whisk together 2 eggs, milk, and cinnamon.
Dip each pancake into the egg mixture, letting excess drip off.
In the same skillet, melt 1 tablespoon butter over medium heat. Cook dipped pancakes for 2-3 minutes per side, until golden and cooked through. Serve immediately with maple syrup.

Use day-old pancakes for best texture, or make pancakes ahead and refrigerate.
