Ingredients
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
1 large egg
2 tablespoons melted butter
4 breakfast sausage patties
2 large eggs
2 slices cheddar cheese
Maple syrup for serving
Instructions
In a bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, whisk together milk, 1 egg, and melted butter. Pour wet ingredients into dry and stir until just combined (batter may be lumpy).
Heat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup batter per pancake onto the skillet. Cook until bubbles form on surface and edges look set, about 2 minutes. Flip and cook another 1-2 minutes. Repeat to make 4 pancakes. Keep warm.
In the same skillet, cook sausage patties over medium heat until browned and cooked through, about 3-4 minutes per side. Remove and keep warm.
In the same skillet, fry 2 eggs to your liking (sunny-side up or over easy). Season with salt and pepper.
Assemble sandwiches: Place one pancake on a plate, top with a sausage patty, a fried egg, and a slice of cheese. Top with another pancake. Repeat for second sandwich.
Serve immediately with maple syrup for dipping or drizzling.
Tips
For extra flavor, add a pinch of cinnamon or vanilla to the pancake batter.
These sandwiches are best eaten fresh but can be wrapped in foil and kept warm in a low oven for up to 20 minutes.
