Ingredients
1 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
8 large eggs, beaten
1/4 cup milk
8 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese

Instructions
In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk buttermilk, 1 egg, and melted butter. Pour wet into dry and stir until just combined (lumps are okay).
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour 1/4 cup batter per pancake onto the skillet. Cook until bubbles form on surface and edges look set, about 2 minutes. Flip and cook 1 minute more. Repeat to make 4 large pancakes (about 8 inches wide). Keep warm.
In a bowl, whisk the 8 eggs with milk and a pinch of salt and pepper. Heat a non-stick skillet over medium-low heat. Pour in eggs and cook, stirring gently, until soft curds form, about 5 minutes. Remove from heat.
Lay a pancake on a plate. Spoon 1/4 of the scrambled eggs down the center. Top with 1/4 of the crumbled bacon and 1/4 cup cheese. Fold the bottom of the pancake over the filling, then fold in the sides, and roll up tightly like a burrito. Repeat with remaining pancakes.
Serve immediately with maple syrup drizzled on top or on the side.
Tips
For extra flavor, add cooked sausage or diced ham instead of bacon.
If pancakes are too thick to roll, make them slightly thinner by adding a tablespoon more buttermilk to the batter.
These burritos can be wrapped in foil and kept warm in a 200°F oven for up to 30 minutes.
