Ingredients
1 1/2 pounds Yukon Gold potatoes, cut into 1/2-inch cubes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 tablespoons unsalted butter
2 tablespoons chopped fresh parsley
Instructions
Place the potato cubes in a large bowl and cover with cold water. Let soak for 10 minutes, then drain and pat dry thoroughly with a clean kitchen towel.
In a large non-stick skillet, heat the olive oil over medium-high heat. Add the potatoes in a single layer (work in batches if needed).
Cook without stirring for 5 minutes, until the bottoms are golden brown. Flip the potatoes and continue cooking, stirring occasionally, for another 10-12 minutes until all sides are crispy and potatoes are tender.
Season with salt, pepper, garlic powder, and paprika. Add the butter and stir until melted and potatoes are coated.
Remove from heat, sprinkle with fresh parsley, and serve immediately.
