- 1 cup chopped okra

- 1 teaspoon ground cayenne pepper (adjust to taste)
- 1 teaspoon salt, or to taste
- 1/2 teaspoon ground black pepper
- 1 smoked fish (optional, flaked)
Instructions
- Heat palm oil in a large pot over medium heat. Add onions and sauté until translucent, about 5 minutes.
- Add garlic and ginger, cook for 1 minute until fragrant.
- Add beef or chicken pieces and brown on all sides, about 5 minutes.
- Stir in blended tomatoes and tomato paste, cook for 5 minutes, stirring occasionally.
- Pour in broth, add cayenne, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until meat is tender.
- Add okra and cook for 5 minutes.
- Stir in spinach or kale and smoked fish (if using). Cook for 2-3 minutes until greens are wilted.
- Adjust seasoning to taste. Serve hot.
