Ingredients
24 fresh oysters, shucked and on the half shell
6 slices bacon, finely chopped
2 tablespoons Worcestershire sauce
2 tablespoons tomato sauce (ketchup)
1 tablespoon butter, melted
Freshly ground black pepper, to taste
Lemon wedges, for serving
Instructions
Preheat the grill (broiler) to high heat.
In a small bowl, mix together the Worcestershire sauce, tomato sauce, and melted butter.
Place the oysters on a baking tray lined with rock salt or crumpled foil to keep them stable.
Spoon a small amount of the sauce mixture over each oyster.
Top each oyster with a generous pinch of chopped bacon.
Grill (broil) the oysters for 5-8 minutes, until the bacon is crispy and the oysters are heated through.
Serve immediately with lemon wedges and extra black pepper.
Tips
Use rock salt on the baking tray to keep the oysters upright and stable.
For extra smokiness, use thick-cut bacon.
Serve as soon as they come out of the grill for the best texture.
