Ingredients
1 pint shucked oysters, drained and chopped
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 large egg, lightly beaten
1/2 cup milk
2 tablespoons chopped fresh parsley
2 green onions, thinly sliced
Vegetable oil for frying
Instructions
In a large bowl, whisk together flour, baking powder, salt, black pepper, and cayenne pepper.
In a separate bowl, combine egg, milk, parsley, and green onions. Add to dry ingredients and stir until just combined.
Fold in the chopped oysters until evenly distributed.
Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
Drop tablespoonfuls of batter into the hot oil, flattening slightly with the back of the spoon. Fry in batches without overcrowding.
Cook until golden brown, about 2-3 minutes per side. Drain on paper towels.
Serve hot with lemon wedges or tartar sauce.
