Ingredients
1 whole chicken (3-4 lbs), cut into 8 pieces
1 cup buttermilk
1 large egg
1 cup all-purpose flour
1 cup panko breadcrumbs
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 cup vegetable oil
Instructions
Preheat oven to 400°F. Place a wire rack on a baking sheet and set aside.
In a shallow bowl, whisk together buttermilk and egg. In another shallow bowl, combine flour, panko, salt, paprika, garlic powder, onion powder, and black pepper.
Dip each chicken piece into the buttermilk mixture, then dredge in the flour mixture, pressing to adhere. Place on the wire rack.
Drizzle or brush the chicken pieces with vegetable oil.
Bake for 40-45 minutes, or until golden brown and internal temperature reaches 165°F, turning once halfway through.
Let rest 5 minutes before serving.
Tips
For extra crispiness, let the coated chicken rest in the refrigerator for 30 minutes before baking.
Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven to restore crispness.
