Ingredients
2 slices sourdough bread (1/2 inch thick)
1 ripe avocado
2 oz fresh goat cheese, softened
1 tbsp lemon juice
1 tbsp extra-virgin olive oil
1/4 tsp salt
1/8 tsp black pepper
1 tbsp fresh chives, chopped
1 tbsp fresh parsley, chopped
Optional: red pepper flakes for garnish
Instructions
Toast the bread slices until golden and crisp.
Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork to desired consistency.
Stir in lemon juice, olive oil, salt, and pepper into the mashed avocado.
Spread softened goat cheese evenly over each toast slice.
Top with the avocado mixture, spreading evenly.
Sprinkle with chives and parsley. Add red pepper flakes if desired. Serve immediately.
