Ingredients
1 large sweet onion, sliced into 1/2-inch rings
1 cup buttermilk
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Vegetable oil, for frying
Instructions
Separate onion slices into rings and place in a bowl. Pour buttermilk over rings and let soak for 10 minutes.
In a shallow dish, whisk together flour, cornstarch, paprika, garlic powder, salt, and pepper.
Heat 1 inch of oil in a deep skillet or Dutch oven to 350°F (175°C).
Working in batches, dredge soaked onion rings in the flour mixture, shaking off excess.
Fry rings for 2-3 minutes per side until golden brown. Drain on paper towels.
Season immediately with a pinch of salt and serve on burgers.
Tips
For extra crunch, double-dip rings back into buttermilk and flour mixture before frying.
Keep finished rings warm in a 200°F oven while frying remaining batches.
Leftover rings can be reheated in a 400°F oven for 5 minutes to restore crispiness.
