1 cup (2 sticks) unsalted butter, softened
1 cup packed light brown sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups old-fashioned rolled oats
1 (14 oz) can sweetened condensed milk
1 cup semisweet chocolate chips
2 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking pan or line with parchment paper.
In a large bowl, beat 1 cup butter and brown sugar until creamy. Add 1 teaspoon vanilla and mix well.
In a separate bowl, whisk flour, baking soda, and 1/2 teaspoon salt. Gradually add to butter mixture, mixing until combined. Stir in oats until a crumbly dough forms. Set aside 1 1/2 cups of the mixture for the topping.
Press the remaining oatmeal mixture evenly into the bottom of the prepared pan. Bake for 10 minutes, until lightly golden.
Meanwhile, make the fudge layer: In a medium saucepan over low heat, combine sweetened condensed milk, chocolate chips, and 2 tablespoons butter. Stir constantly until melted and smooth. Remove from heat and stir in 1/2 teaspoon vanilla and 1/4 teaspoon salt.
Pour the fudge mixture over the hot crust and spread evenly. Sprinkle the reserved oatmeal mixture over the fudge layer.
Bake for 20-25 minutes, until the top is golden brown and the edges are set. Cool completely in the pan on a wire rack before cutting into bars.
