Ingredients
1/2 cup unsalted butter, melted
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup old-fashioned rolled oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup semisweet chocolate chips
1/2 cup chopped walnuts or pecans
Instructions
Preheat oven to 350°F (175°C). Line a 10x15-inch rimmed baking sheet with parchment paper.
In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Whisk in egg and vanilla.
In a separate bowl, whisk flour, oats, baking soda, salt, and cinnamon. Add to wet ingredients and stir until just combined. Fold in chocolate chips and nuts.
Transfer dough to prepared baking sheet. Using a spatula or your hands, press dough evenly into a thin rectangle about 1/4-inch thick. It doesn't need to cover the entire sheet.
Bake for 20-25 minutes, until deep golden brown and firm to the touch. Cool completely on the pan on a wire rack (about 30 minutes).
Once cool, break into irregular pieces. Store in an airtight container at room temperature for up to 1 week.
Tips
For extra crunch, sprinkle a pinch of flaky sea salt on top before baking.
Swap chocolate chips for butterscotch or white chocolate chips if desired.
If the bark softens, re-crisp in a 300°F oven for 5 minutes.
