Ingredients
- 3 cups rolled oats
- 1 cup mixed nuts (almonds, pecans, walnuts), roughly chopped
- 1/2 cup unsweetened shredded coconut
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup dried cranberries or raisins
Instructions
- Preheat oven to 325°F (160°C). Line a large baking sheet with parchment paper.
- In a large bowl, combine oats, nuts, and shredded coconut.
- In a small bowl, whisk together maple syrup, melted coconut oil, vanilla extract, and salt.
- Pour the wet mixture over the dry ingredients and stir until evenly coated.
- Spread the mixture in an even layer on the prepared baking sheet.
- Bake for 20-25 minutes, stirring halfway through, until golden brown.
- Remove from oven and let cool completely on the baking sheet. The granola will crisp up as it cools.
- Stir in dried cranberries or raisins. Store in an airtight container.
