Ingredients
2 cups rolled oats
1 cup mixed nuts (almonds, walnuts, pecans), roughly chopped
1/2 cup shredded coconut (unsweetened)
1/2 cup dried fruit (cranberries, raisins, or chopped apricots)
1/2 cup honey
1/4 cup coconut oil or butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
Spread oats, nuts, and coconut on a baking sheet. Toast for 8-10 minutes, stirring halfway, until lightly golden. Transfer to a large bowl and stir in dried fruit.
In a small saucepan, combine honey, coconut oil, vanilla, and salt. Heat over medium, stirring, until melted and smooth. Do not boil.
Pour the honey mixture over the oat mixture and stir until everything is evenly coated.
Transfer the mixture to the prepared pan. Press firmly and evenly into the pan using a spatula or the bottom of a glass.
Bake for 15-18 minutes, until golden brown at the edges. Cool completely in the pan on a wire rack (about 1 hour).
Once cool, lift out using the parchment overhang and cut into 12 bars.
Tips
For extra flavor, add 1/4 teaspoon cinnamon or a pinch of nutmeg.
Store in an airtight container at room temperature for up to 1 week, or freeze for up to 3 months.
If the mixture is too crumbly, add an extra tablespoon of honey or coconut oil.
