Ingredients
1 1/2 cups raw cashews
1/4 cup nutritional yeast
2 tablespoons lemon juice
1 tablespoon apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 cup water, plus more as needed
Instructions
Place cashews in a bowl and cover with water. Soak for at least 4 hours or overnight. Drain and rinse.
In a high-speed blender, combine soaked cashews, nutritional yeast, lemon juice, apple cider vinegar, salt, garlic powder, onion powder, and 1/2 cup water.
Blend on high until completely smooth and creamy, scraping down sides as needed. Add more water 1 tablespoon at a time if too thick, until desired consistency is reached.
Taste and adjust seasoning, adding more salt or lemon juice if desired.
Transfer to a container and refrigerate for at least 2 hours to firm up before serving.
Tips
For a firmer cheese, reduce water slightly or add 1 tablespoon of coconut oil.
Store in an airtight container in the refrigerator for up to 1 week.
