Ingredients
200g ground pork
100g dried shiitake mushrooms, rehydrated and finely chopped
3 tablespoons soy sauce
2 tablespoons dark soy sauce
2 tablespoons Shaoxing wine
1 tablespoon sugar
1 teaspoon five-spice powder
3 cloves garlic, minced
2 shallots, finely chopped
2 tablespoons vegetable oil
1/2 cup water
Instructions
Heat oil in a wok or skillet over medium-high heat. Add garlic and shallots, stir-fry until fragrant, about 1 minute.
Add ground pork and cook, breaking it apart, until browned, about 5 minutes.
Add chopped shiitake mushrooms and stir-fry for 2 minutes.
Add soy sauces, dark soy sauce, Shaoxing wine, sugar, five-spice powder, and water. Stir to combine.
Reduce heat to low and simmer, stirring occasionally, until the liquid has reduced and the mixture is thick and glossy, about 10-15 minutes.
Taste and adjust seasoning if needed. Let cool before storing.
