Ingredients
8 cups chicken or vegetable broth
2 cups water
4 cloves garlic, smashed
2 inches fresh ginger, sliced
2 stalks lemongrass, bruised and cut into 2-inch pieces
2 tablespoons soy sauce
1 tablespoon fish sauce (optional)
1 teaspoon sugar
2 star anise
1 cinnamon stick
1 teaspoon white pepper
Instructions
In a large pot, combine broth, water, garlic, ginger, and lemongrass. Bring to a boil over high heat.
Reduce heat to low and add soy sauce, fish sauce (if using), sugar, star anise, cinnamon stick, and white pepper. Stir to combine.
Simmer uncovered for 45-60 minutes, allowing flavors to meld. Taste and adjust seasoning with more soy sauce or sugar if needed.
Strain the broth through a fine-mesh sieve into a clean pot or heatproof container. Discard solids.
Use immediately as a base for noodle soup, or let cool and refrigerate for up to 5 days or freeze for up to 3 months.
