Ingredients
2 cups chocolate cookie crumbs (about 20 cookies)
1/4 cup unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
1 tsp vanilla extract
1/2 cup heavy cream
1/2 cup dark chocolate chips, melted and cooled
1/2 cup dark chocolate chips (for ganache)
1/4 cup heavy cream (for ganache)
1/2 cup chocolate truffles, chopped (optional)
Instructions
1. In a medium bowl, combine cookie crumbs and melted butter. Press firmly into the bottom of an 8x8-inch baking pan lined with parchment paper. Refrigerate while preparing filling.
2. In a large bowl, beat cream cheese, sugar, and vanilla until smooth. In a separate bowl, whip 1/2 cup heavy cream to stiff peaks. Fold whipped cream into cream cheese mixture.
3. Fold melted and cooled dark chocolate into the cream cheese mixture until fully combined. Spread over crust. Sprinkle chopped truffles on top if using. Refrigerate for at least 4 hours until set.
4. For ganache: Place 1/2 cup chocolate chips in a heatproof bowl. Heat 1/4 cup heavy cream until just simmering, pour over chips, let sit 1 minute, then stir until smooth. Let cool slightly, then pour over cheesecake layer, spreading evenly. Refrigerate until ganache is firm, about 30 minutes.
5. Slice into bars and serve chilled.
