Ingredients
4 cups Cheerios cereal
1/2 cup creamy peanut butter
1/2 cup honey
1/4 cup unsalted butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup semisweet chocolate chips (optional)
Instructions
Line an 8x8-inch baking dish with parchment paper, leaving overhang on two sides.
In a large microwave-safe bowl, combine peanut butter, honey, and butter. Microwave in 30-second intervals, stirring between, until melted and smooth.
Stir in vanilla extract and salt until combined.
Add Cheerios to the peanut butter mixture and gently fold until all cereal is evenly coated.
Transfer mixture to the prepared dish. Press firmly and evenly into the pan using a spatula or your hands (lightly greased).
If using chocolate chips, melt them in a microwave-safe bowl in 20-second intervals, stirring until smooth. Drizzle over the bars.
Refrigerate for at least 1 hour until set. Lift out using parchment paper, cut into 12 bars, and serve.
Tips
Store bars in an airtight container at room temperature for up to 5 days.
For extra crunch, add 1/4 cup chopped peanuts or mini chocolate chips.
To make them vegan, use maple syrup instead of honey and vegan butter.
