1/2 cup creamy peanut butter
1/2 cup honey
1/4 cup coconut oil
1 teaspoon vanilla extract
3 cups crispy rice cereal
1 cup old-fashioned rolled oats
1/2 cup mini chocolate chips
1/4 cup dried cranberries
Instructions
Line an 8x8-inch baking dish with parchment paper, leaving overhang on two sides.
In a large microwave-safe bowl, combine peanut butter, honey, and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth and combined.
Stir in vanilla extract.
Add crispy rice cereal, oats, chocolate chips, and dried cranberries. Mix until evenly coated.
Transfer mixture to the prepared dish and press firmly into an even layer using a spatula or your hands (lightly greased).
Refrigerate for at least 1 hour until firm. Lift out using parchment and cut into 12 bars.
