  3. Punch down dough and divide into 8 equal pieces. Roll each into a ball, then flatten into a 4-inch circle. Place about 1.5 tablespoons of filling in the center.
  4. Bring edges of dough up and pleat to seal, forming a bun. Place each bun on a small square of parchment paper.
  5. Arrange buns in a steamer basket, leaving space between them. Cover and let rise for 20 minutes.
  6. Steam over boiling water for 15 minutes. Do not lift lid during steaming. Remove from heat and let sit 2 minutes before opening lid. Serve hot.
