Ingredients
2 large eggs
1 tablespoon unsalted butter
2 slices American cheese
1 soft Italian roll or kaiser roll, split
2 strips bacon (optional)
Salt and freshly ground black pepper to taste
Ketchup or hot sauce (optional)
Instructions
If using bacon, cook in a skillet over medium heat until crispy, about 4 minutes per side. Transfer to paper towels and keep warm.
In a small bowl, beat eggs with a pinch of salt and pepper until frothy.
Melt butter in a nonstick skillet over medium-low heat. Add eggs and let set for 30 seconds, then stir gently with a rubber spatula, pushing cooked eggs from edges to center. Continue until eggs are soft and creamy, about 2 minutes.
Place cheese slices on the bottom half of the roll. Spoon scrambled eggs over cheese, then top with bacon if using. Close sandwich with top half of roll.
