Ingredients
2 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed light brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
3/4 cup unsalted butter, cold and cut into small pieces
1 large egg
1/2 cup buttermilk
1 teaspoon vanilla extract
1/2 cup sour cream
Instructions
Preheat oven to 350°F (175°C). Grease a 9-inch square or round baking pan.
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Set aside 1 1/2 cups of this crumb mixture for the topping.
To the remaining mixture, add egg, buttermilk, vanilla, and sour cream. Stir until just combined (do not overmix).
Spread the batter evenly into the prepared pan.
Sprinkle the reserved crumb topping evenly over the batter, pressing gently to adhere.
Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan on a wire rack for at least 20 minutes before serving.
Tips
For extra crumbly topping, chill the crumb mixture for 10 minutes before sprinkling.
Serve warm or at room temperature. Store covered at room temperature for up to 3 days.
Dust with powdered sugar before serving if desired.
