  1. Place navy beans in a large bowl, cover with water by 2 inches, and soak overnight. Drain and rinse.
  2. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
  3. Add soaked beans, ham hock, broth, bay leaves, and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, until beans are tender.
  4. Remove ham hock from pot. When cool enough to handle, shred meat from bone, discarding skin and bone. Return meat to pot.
  5. Discard bay leaves. Season soup with salt and pepper to taste. If desired, use an immersion blender to partially puree soup for a creamier texture.
  6. Serve hot, garnished with parsley if using.
