1 cup buttermilk
1 large egg
1 cup all-purpose flour

Instructions
Pound chicken breasts to an even 1/2-inch thickness. In a bowl, whisk buttermilk and egg. Submerge chicken in buttermilk mixture; cover and refrigerate at least 1 hour (or up to 4 hours).
In a shallow dish, whisk flour, cornstarch, salt, pepper, paprika, garlic powder, onion powder, and 1/2 teaspoon cayenne. Remove chicken from buttermilk, letting excess drip off. Dredge in flour mixture, pressing firmly to adhere. Place on a wire rack.
Heat 1/2 inch oil in a large cast-iron skillet or heavy-bottomed pot to 350°F (175°C). Fry chicken in batches (do not crowd) until golden brown and cooked through, about 4-5 minutes per side. Transfer to a clean wire rack set over a baking sheet.
In a small saucepan, melt butter over low heat. Stir in 2 tablespoons cayenne, brown sugar, smoked paprika, garlic powder, and salt. Cook, stirring, until sugar dissolves, about 1 minute. Remove from heat.
Brush the hot cayenne-butter mixture generously over both sides of each fried chicken breast.
