Ingredients
- 1 lb ground beef
- 1 packet taco seasoning (or 2 tbsp homemade blend)
- 1/2 cup water
- 1 (15 oz) can black beans, drained and rinsed
- 1 (12 oz) bag tortilla chips
- 2 cups shredded Mexican blend cheese
- 1 cup pico de gallo or salsa
- 1/2 cup sour cream
- 1 avocado, diced
- 1/4 cup sliced jalapeños (optional)
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with foil or parchment paper.
- In a skillet over medium-high heat, cook ground beef until browned, breaking it up. Drain excess fat.
- Add taco seasoning and water; stir and simmer until thickened, about 3 minutes. Stir in black beans and remove from heat.
- Spread tortilla chips evenly on the prepared baking sheet. Spoon beef-bean mixture over chips. Sprinkle cheese evenly on top.
- Bake for 8-10 minutes until cheese is melted and bubbly.
- Remove from oven and immediately top with pico de gallo, sour cream, avocado, jalapeños (if using), and cilantro. Serve hot.
