Ingredients
2 tablespoons olive oil
8 ounces cremini mushrooms, sliced
3 cloves garlic, minced
1 can (14.5 oz) crushed tomatoes
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon tomato paste
1 teaspoon sugar
Instructions
Heat olive oil in a medium saucepan over medium heat. Add mushrooms and cook, stirring occasionally, until they release their liquid and start to brown, about 5-7 minutes.
Add garlic and cook for 1 minute until fragrant.
Stir in crushed tomatoes, oregano, salt, pepper, tomato paste, and sugar. Bring to a simmer.
Reduce heat to low and simmer uncovered for 15-20 minutes, stirring occasionally, until sauce thickens.
Use an immersion blender to partially blend the sauce for a smoother texture, or leave chunky. Adjust seasoning to taste.
Tips
For a deeper flavor, add a splash of balsamic vinegar at the end.
This sauce can be refrigerated for up to 5 days or frozen for 3 months.
If using fresh tomatoes, blanch and peel 4-5 medium tomatoes before crushing.
