Ingredients
3 tablespoons coconut oil
1/2 cup popcorn kernels
1 teaspoon Flavacol (or fine popcorn salt)
2 tablespoons melted butter (optional, for extra buttery flavor)
Instructions
Place a large pot with a tight-fitting lid over medium-high heat. Add the coconut oil and let it melt completely.
Add 3 popcorn kernels to the pot, cover, and wait until they pop. This indicates the oil is hot enough.
Remove the pot from heat, quickly add the remaining popcorn kernels and Flavacol. Stir to coat the kernels with oil and seasoning.
Cover the pot and return to medium-high heat. Shake the pot gently to distribute heat. Once popping starts, shake occasionally.
When popping slows to about 2 seconds between pops, remove from heat. Let sit covered for 30 seconds to finish popping.
If using melted butter, drizzle over popped popcorn and toss to coat. Serve immediately.
Tips
Flavacol is the key to authentic movie theater flavor; it's a fine salt with butter flavor and yellow color. Find it online or at specialty stores.
For extra buttery popcorn, use clarified butter (ghee) which won't make the popcorn soggy.
Store leftover popcorn in an airtight container at room temperature for up to 2 days. Re-crisp in a 300°F oven for a few minutes.
