Ingredients
12 cups popped popcorn (about 1/2 cup unpopped kernels)
2 cups mini pretzel twists
1 cup salted peanuts
1/2 cup unsalted butter
1/2 cup light brown sugar, packed
1/4 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
Instructions
Preheat oven to 250°F (120°C). Line a large rimmed baking sheet with parchment paper.
In a very large bowl, combine popcorn, pretzels, and peanuts. Set aside.
In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup, and salt. Bring to a boil, stirring constantly. Boil without stirring for 4 minutes.
Remove from heat. Stir in baking soda and vanilla extract (mixture will foam). Immediately pour over popcorn mixture and toss gently with a spatula until evenly coated.
Spread mixture onto prepared baking sheet in an even layer. Bake for 15 minutes, stirring halfway through.
Remove from oven and let cool completely on baking sheet. Break into clusters. Store in an airtight container.
Tips
For extra crunch, let the mix cool completely before breaking apart.
Store in an airtight container at room temperature for up to 1 week.
Add candy-coated chocolates or dried fruit after baking for variety.
