Ingredients
3 tablespoons coconut oil
1/2 cup popcorn kernels
1/2 teaspoon Flavacol (or fine popcorn salt)
2 tablespoons melted butter (optional)
Instructions
Place a large pot with a tight-fitting lid over medium-high heat. Add coconut oil and let it melt.
Add 3 popcorn kernels to the pot and cover. When they pop, the oil is hot enough.
Remove the pot from heat, add the remaining popcorn kernels and Flavacol. Stir to coat.
Cover the pot and let it sit for 30 seconds to allow kernels to come to temperature.
Return the pot to medium-high heat. Shake the pot occasionally as the popcorn pops.
Once popping slows to about 2 seconds between pops, remove from heat and pour into a large bowl.
If desired, drizzle melted butter over the popcorn and toss to coat. Serve immediately.
Tips
For extra movie theater flavor, use clarified butter instead of regular butter.
Store leftover popcorn in an airtight container for up to 2 days, but it's best fresh.
If you don't have Flavacol, use finely ground popcorn salt or pulse regular salt in a spice grinder.
