Ingredients
- 1 (3 oz) package fruit-flavored gelatin (e.g., strawberry, raspberry)
- 1 cup boiling water
- 1 cup cold water
- 1 cup mixed fresh fruit (e.g., sliced strawberries, blueberries, diced peaches)
- 1 tablespoon lemon juice (optional, to brighten flavor)
- Mint leaves for garnish (optional)
Instructions
- In a medium bowl, dissolve the gelatin powder in 1 cup of boiling water, stirring until completely dissolved.
- Stir in 1 cup of cold water and lemon juice (if using).
- Arrange the fresh fruit in the bottom of a 4-cup mold or individual ramekins.
- Carefully pour the gelatin mixture over the fruit.
- Refrigerate for at least 4 hours, or until firm.
- To unmold, dip the mold in warm water for a few seconds, then invert onto a serving plate. Garnish with mint leaves if desired.
Tips
- For best results, use fruit that is not too acidic (like citrus) as it may prevent the gelatin from setting.
- If using canned fruit, drain well and reduce the cold water slightly to compensate for extra liquid.
- Store leftovers covered in the refrigerator for up to 3 days.
