Ingredients
1 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water
1/4 teaspoon salt
1 cup mixed nuts (almonds, pecans, walnuts, cashews), roughly chopped
2 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
1/2 teaspoon baking soda
Instructions
Line a rimmed baking sheet with parchment paper or a silicone baking mat. Set aside.
In a heavy-bottomed saucepan, combine sugar, corn syrup, water, and salt. Stir over medium heat until sugar dissolves.
Attach a candy thermometer to the pan. Increase heat to medium-high and bring to a boil without stirring. Cook until the mixture reaches 300°F (hard crack stage), about 10-12 minutes.
Remove from heat. Quickly stir in the mixed nuts, butter, vanilla, and baking soda. The mixture will foam. Stir just until combined.
Immediately pour the brittle onto the prepared baking sheet. Spread into a thin, even layer using a greased spatula or the back of a spoon.
Let cool completely at room temperature, about 30 minutes. Once set, break into pieces.
Store in an airtight container at room temperature for up to 2 weeks.
Tips
Use a candy thermometer for accuracy; if you don't have one, test by dropping a small amount of syrup into cold water—it should form hard, brittle threads.
Work quickly after adding baking soda as the brittle sets fast.
For a salted version, sprinkle flaky sea salt on top before the brittle hardens.
