Ingredients
1 tablespoon vegetable oil
1 lb boneless chicken thighs or beef steak, cut into bite-sized pieces
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
Salt and pepper to taste
1 cup long-grain white rice
2 cups chicken broth
1/2 cup tomato sauce
1 (15 oz) can black beans, drained and rinsed
4 large (10-inch) flour tortillas
1 cup shredded Monterey Jack or cheddar cheese
1/2 cup sour cream
1/2 cup salsa verde or red salsa
1 avocado, sliced (optional)
1/4 cup chopped fresh cilantro
Instructions
Heat oil in a skillet over medium-high heat. Add chicken or beef, season with chili powder, cumin, garlic powder, salt, and pepper. Cook until browned and cooked through, about 6-8 minutes. Set aside.
In a saucepan, combine rice, chicken broth, and tomato sauce. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and liquid absorbed. Fluff with a fork.
In a small pot, warm the black beans over low heat. Season with a pinch of salt and cumin if desired.
Warm tortillas one at a time in a dry skillet or microwave for 15 seconds to make pliable.
Assemble burritos: Lay a tortilla flat. In the center, layer about 1/2 cup rice, 1/4 of the beans, 1/4 of the meat, 1/4 cup cheese, 1 tablespoon sour cream, 1 tablespoon salsa, and a few avocado slices and cilantro if using.
Fold the sides of the tortilla over the filling, then fold the bottom up and roll tightly into a burrito. Repeat with remaining ingredients.
Optional: Heat a dry skillet over medium-high heat and toast the burritos seam-side down for 2-3 minutes until golden and crisp.
Tips
For a vegetarian version, substitute meat with grilled vegetables or extra beans.
Serve with extra salsa, sour cream, and hot sauce on the side.
To keep burritos warm, wrap in foil and place in a 200°F oven until ready to serve.
