Ingredients
1 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
1 large egg
2 tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
1/2 cup whipped cream cheese
1/4 cup berry jam or smoked salmon and dill cream
Instructions
In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In a small bowl, whisk buttermilk, egg, melted butter, and vanilla until combined.
Pour wet ingredients into dry ingredients and stir until just combined (lumps are okay).
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.
For each mini pancake, drop about 1 tablespoon of batter onto the skillet. Cook until bubbles form on surface and edges are set, about 1-2 minutes. Flip and cook another 30-60 seconds. Repeat with remaining batter to make about 36 mini pancakes.
Let pancakes cool slightly. Assemble stacks by placing one pancake, spreading a thin layer of whipped cream cheese, then a small amount of jam (or savory filling). Top with another pancake, repeat layering, and finish with a third pancake. Secure with a toothpick if desired.
Serve warm or at room temperature.
Tips
For savory stacks, use smoked salmon and dill cream cheese, or pesto and mozzarella.
Make pancakes ahead and reheat in a 300°F oven for 5 minutes before assembling.
