Ingredients
1/2 cup yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 large egg
1 tablespoon vegetable oil
24 cocktail sausages (like Lit'l Smokies)
Vegetable oil for frying
Instructions
In a medium bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
In a small bowl, whisk together milk, egg, and 1 tablespoon vegetable oil. Pour into dry ingredients and stir until just combined. Let batter rest for 5 minutes.
Pat cocktail sausages dry with paper towels. Insert a toothpick into each sausage, leaving about 1 inch exposed for handling.
Heat 2 inches of vegetable oil in a deep pot to 350°F (175°C).
Dip each sausage into the batter, allowing excess to drip off, then carefully place into hot oil. Fry in batches without crowding, turning occasionally, until golden brown, about 2-3 minutes.
Transfer to a paper towel-lined plate. Serve warm with ketchup or mustard.
Tips
For extra crispiness, use buttermilk instead of regular milk.
Bites can be kept warm in a 200°F oven for up to 30 minutes.
