Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter, melted
3 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
8 fun-size Milky Way bars (about 4.5 oz), chopped
1/2 cup heavy cream
4 ounces semisweet chocolate, chopped
2 fun-size Milky Way bars, chopped (for topping)
Instructions
Preheat oven to 325°F (163°C). Wrap the outside of a 9-inch springform pan with foil.
In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the bottom of the prepared pan. Bake for 10 minutes. Let cool.
In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla and sour cream until just combined. Fold in chopped Milky Way bars.
Pour filling over crust. Place springform pan in a larger roasting pan and fill with hot water halfway up the sides of the springform pan.
Bake for 45-55 minutes, until center is almost set but still slightly jiggly. Turn off oven, crack door, and let cheesecake cool in oven for 1 hour. Then refrigerate for at least 4 hours or overnight.
For ganache: Heat heavy cream in a small saucepan until simmering. Pour over chopped chocolate in a bowl; let stand 1 minute, then stir until smooth. Let cool slightly.
Pour ganache over chilled cheesecake, spreading evenly. Sprinkle with remaining chopped Milky Way bars. Refrigerate until ganache sets, about 30 minutes.
