1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini
2 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
1 small garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon ground cumin
2 to 3 tablespoons ice water
Optional: paprika, parsley, or pine nuts for garnish
Instructions
In a food processor, combine chickpeas, tahini, olive oil, lemon juice, garlic, salt, and cumin. Process until smooth, about 1 minute.
With the processor running, add ice water 1 tablespoon at a time until the hummus is creamy and light, about 2-3 tablespoons total.
Taste and adjust seasoning with more salt or lemon juice if desired.
Transfer to a serving bowl, drizzle with olive oil, and sprinkle with paprika, parsley, or pine nuts if using.
