Ingredients

- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (15 oz) can black beans or pinto beans, drained and rinsed
- 1 ½ cups chicken or vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ cup chopped fresh cilantro (optional)
Instructions
- Heat oil in a large skillet or saucepan over medium heat. Add onion and cook until softened, about 4 minutes. Add garlic and cook 1 minute more.
- Stir in rice and cook, stirring frequently, until rice is lightly toasted, about 2 minutes.
- Add diced tomatoes with their juices, beans, broth, cumin, chili powder, and salt. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20-25 minutes, until rice is tender and liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and stir in cilantro if desired.
